Since then, Montecatini Ristorante has become a place of true Italian dining experience in Walnut Creek, California. All our dishes are meticulously prepared with the finest and freshest ingredients. Our chef-owner Ermes Paulin has been our executive chef since our restaurant’s opening day. A true Italian chef, Ermes was born in Vicenza Italy, and was classically trained in Italy at one of the finest culinary academy hotel in the world at the age of 17. Ermes is the heart and soul of Montecatini. You can find him at the restaurant almost every day creating the most delicious and consistently amazing dishes for everyone!
Our kitchen is located in front of the restaurant where you can say Hi to the chefs, and see that your food is prepared as fresh as can be. For example, when you order our eggplant Parmigiana, you can see our chef cut slices from the whole fresh eggplant after the order is received. Our front-of-the-house staff is trained to bring your ready dishes from the kitchen to your table immediately within 30 seconds, if possible. We establish a standard of excellence that we work hard to maintain every moment.To complement your Montecatini dining experience, we have an extensive wine list where we highlight a variety of great Italian and California wines. There are also about twenty types of wines-by-the-glass every day. In addition, we have a full bar selection that includes over 100 brands of liquor and liqueurs. Our guests can enjoy a glass of Happy Hour wine or full dinner service at our bar area, while watching our favorite Bay Area sports team in action.

Ermes Paulin, Chef-Owner, Montecatini Ristorante

Ermes was born in Vicenza Italy, and left home to Rome at the age of 17 to be trained as a chef. He received a full scholarship for his two year study at the Enalc Hotel, one of the most renowned culinary academy hotel in the world at the time. The Enalc Hotel, by the seaside of Rome, was where the rich and famous lived “La Dolca Vita” and was also young people, such as Ermes Paulin, learned their craft by being trained in the culinary classroom, and then immediately put that knowledge in practice at the hotel’s kitchen. After two years of intense work, those graduated from the culinary program at the Enalc can fit in the best restaurants and hotels in the world.

Since then, Ermes has worked at some of the finest dining establishments all over the world in Rome, London, Ramsa, on the Sitmar’s Fairsea cruise ship, in San Diego, and the San Francisco Bay Area.

While working as a chef in London about 35 years ago, Chef Ermes Paulin was asked by an investor-restauranteur to help open an Italian restaurant in San Diego, California. Ermes said “Yes!” immediately. On the way home, he stopped by a bookstore and looked up where San Diego is. Since coming to the United States, Ermes has been executive chef of several California restaurants and has become a US citizen.

Chef Ermes Paulin opened Montecatini Ristorante on October 17, 1989, several minutes before the 7.1 Loma Prieta Earthquake that ended Game 3 of the Oakland A’s vs SF Giants World Series. Ermes remembered there were 26 customers that evening with then owner Ray, and several of the current Montecatini staff. In 1995, Ray sold the restaurant to Kip Finn. In late 2013, Kip offered to sell the restaurant to his hardworking and talented chef. Early 2014, Ermes became Chef-Owner of Montecatini Ristorante. Ermes is dedicated to his craft and the restaurant unconditionally, whether he is an employee or an owner. Throughout the years, he is meticulous in his kitchen operations, never cut corners, maintains high standards, and goes the extra mile to please the customer. Now being an owner, he enjoys the increased benefit of his hard work and is appreciative of everyone’s support and good wishes.


Teresa Cheung, Owner-General Manager, Montecatini Ristorante

Teresa follows her father’s footstep of being trained and worked professionally as an engineer, and then became a restaurant owner later in life. She remembers well working at her parents’ restaurant throughout her teenager years in Los Angeles. Then she left for college and received her B. S. in Chemical Engineering at Yale University. She also has an MBA from Cal State East Bay. Teresa is a licensed Professional Engineer in Chemical Engineering in California since 1982 and has been a practicing engineer until her husband, Executive Chef Ermes Paulin became owner-chef of the restaurant. Her lifetime of fine dining, business skills, vivacious personality, and falling in love with the Chef, made her uniquely qualified to be the General Manager of Montecatini Ristorante.

Since Teresa became involved with the Montecatini Ristorante, she has introduced daily Happy Hour, Wine-by-the-Glass and Beverage menus, installed acoustic absorbing paneling and a computerized POS system to the restaurant. Yes, after 25 years of hand-written checks, Montecatini welcomes the modern era of technology providing another step to better business management and enhanced customer satisfaction. She is doing her best to lead the Montecatini’s staff in the practice of providing a wonderful dining experience for every customer.
